VERTICAL FARMING IN RESTAURANTS

WHAT IT IS?

Vertical farming is a new and sustainable aeroponic and LED light technology for growing fresh vegetables and herbs indoors for chefs to use in their restaurants.

Going to a restaurant that serves you the vegetables you see from your table where it was picked up does not have to be a fantasy anymore.

This innovative method of agriculture utilizes aeroponic systems, where plants are grown without soil, suspended in air, and nourished with a nutrient-rich mist. Paired with energy-efficient LED lighting, which mimics sunlight and provides the precise wavelengths plants need for optimal growth, vertical farming is transforming the way restaurants source their produce. With the ability to cultivate a wide variety of herbs, leafy greens, and vegetables year-round, it offers a highly sustainable solution for chefs aiming to integrate fresh, high-quality ingredients into their menus.

What makes vertical farming particularly appealing is its low barrier to entry. The downside is the physical space needed for highly demanded restaurants and the initial growing time of the produce (some vegetables may take up to a few months).

    Welcome, Vittoria. Interesting Touch Point. The title wrong footed me a bit: Vertical Farming is an old (yet still important) trend. But your tke on it, you angle: how it can work out in restaurants is fresh. I thank you. room for improvement: yes! Try to write a little bit more structures and succinct, only a little bit. And use the tagging better. Trend field here is: Touch Points. And then you can tag as food & beverage. But this is minimal criticism. I thank you. Pity you can’t follow class. CR

    This is such an interesting trend. It makes me remember a 3-Michelin-Star restaurant in Alba that makes a specific dish only with home-grown herbs.

    We have a step garden on our premises where we grow fresh herbs to incorporate into our dishes. While it doesn’t provide all the fresh ingredients we need for production, it still allows us to include homegrown flavors in our offerings. – This v

    Hi Vittoria!!! The idea of growing fresh produce right on-site definitely enhances the dining experience for guests. People nowadays looking for more green eat up spaces would love it. However, while vertical farming isn’t a brand-new concept, it’s great to see it becoming more mainstream in restaurants.
    One thing I’m curious about is the space requirements for this setup. It seems like a restaurant would need a significant amount of room to implement it effectively. Also, I wonder about the safety of growing veggies indoors with artificial light; it’s crucial that these practices are safe for consumers. Overall, this trend is fascinating, but we need to consider the logistics and safety aspects carefully!

    Truly farm to table! I loved this take on vertical farming and I think it needs to be even more popularised than it is! I use to be a chef myself, and I see the growing need for this; depending on a company for your ingredients can result in poor product, not enough to fulfil your order, and/or delays. Not to mention they love subbing veggies with another alternative that you didn’t ask for! Even past this, with the rising knowledge of chemicals sprayed on our foods, I definitely think we’ll find more of these in homes so that even a non experienced farmer, as you say, can be successful in their growing!
