Our waiter meticulously explained the process of raising Bellota ham pigs, and then guided us through an array of local cheeses and wines. The employees are happy, have a clear love for their ingredients, and enjoy sharing their culture with foreigners. They all understand and believe in the company’s philosophy: find and bring the best possible product to the client. This becomes obvious through simply interacting with them.
