WHAT IT IS?
No, it is not a joke. A small-scale Finnish brewery ‘Ant Brew’ produces beer with goose poop. The beer is brewed using wild herbs, local food waste such as bread, berries, fruit and the most uniquely unbelievable: goose poop. It is a beer with a clear message about the circular economy.
WHY IT’S COOL?
Goose poop is collected in local parks. This ensures that the parks remain clean. Equally important of course is counteracting food waste on broader dimension. Ant Brew does. Their product is a perfect example using residual food streams — with goose poop as the most surprising. “The new beer series is a way to initiate important discussions about food waste, urban agriculture and the potential of local, wild food,” says Kari Puttonen, the owner of Ant Brew.
WHY IT HAS FUTURE GROWTH POTENTIAL?
The use of goose droppings is a good step in the right direction. Don’t worry, Kari Puttonen from Ant Brew says “it doesn’t taste like goose droppings”. The dung is used to roast the malt and gives the beer a smoky taste. Sales of specialty beer are increasing. People are always looking for new flavors. They are also looking for honest food production. This beer can’t disappoint!

That’s a very nice and curious cool seed. Reminds me the Civet Coffee (Kopi Luwak) and the Weasel Coffee, the most expensive coffees in the world, both made with animals poop too. My only concern with the Ant Brew’s beers is about the sanitary and nutritional issues: on Civet Coffee we know that there is a high control about the animal’s diets (and what they’re putting out), but on this beer case it’s not clear yet if the same happens to the gooses (we only know that the poops are collected from the parks, but who feed them and with what?). After the pandemic trauma, society is much more suspicious (and fearful) of the processing of foods of animal origin, especially in terms of hygiene.
Because of that, I’m not sure if this beers are going to be very successful between the public – but I hope it is. After all, the future is residual =)
Although converting animal dung into a drink/food is not new to me, I’m wondering about the flavor of this brew.
