NOTCH is a cocoa-free bar made from brewers’ spent grain: the barley left over after beer production. Developed by Copenhagen food research centre Spora, it uses chocolate-making techniques to turn an overlooked ingredient into a familiar treat.

The idea is simple: value can come from transforming what already exists, not only from sourcing rare ingredients.
